Birthday cakes and Sprinkles!
It was my niece's birthday the other day, and even thought I wasn't on the sunny side, I wanted to make her a cake, even thought I knew she'd have had one already!
I even whipped up some buttercream and used her favourite decorations; SPRINKLES!!
This white cake recipe is my go-to for eveything cake; even cupcakes! It's so versitile, and even easier than it looks! I always get the thumbs up when I make it for a birthday or whip it up for the kid's cupcakes.
Easy Sponge cake
1 cup butter
2 cups sugar
4 eggs
3 cups self raising flour
1 cup milk
1 tsp vanilla extract
Grease and flour tins. Cream butter until fluffy. Add sugar and cream well.
Add eggs 1 at a time, beating eat time.
Add flour and milk simultaneously.
Divide between tins. Bake for 20-30 mins.
Cool in pans for 5-10 mins. Turn onto a cooling rack and let cool completely.
Buttercream
For every cup of butter, I use about two cups of icing sugar; this cake used about 2-3 cups!
Whip the butter; this I do for about eight minutes; seriously! I was fortunate as I have a new mixer and it was less painful on my hands, but when I used to do it by hand I had rough wrists for days!!!
Add the sugar; a cup at a time, and, depending on what you plan to do with it; empty it into a piping bag and use it on your cupcakes, or spread it on your cake. Easy!!!
