Simple Sugar Cookies
These are the first thing I ever mastered; not that they need mastering; they're so easy, and so versitle. I've been known to add chocolate chips, and at one time coconut, which seemed to keep them moist even longer!
2 ¾ cups flour
1 ½ cups sugar
1 tsp baking powder
½ tsp baking soda
I cup butter, softened
I egg
I tsp vanilla extract
Preheat oven to 375°F (190°C). mix flour, baking powder and soda together.
Cream butter and sugar. Beat in egg and vanilla. Gradually add the dry ingredients.
Roll tsps of dough or cut into shapes with cookie cutters and place onto baking sheet of un-greased paper. Bake for 8-10mins. Let cool.
My notes:
Make sure each cookie is spaced a little apart; these in the picture above moulded together and it took a while to prise them from each other!!
