Coconut Ice

It's been a lovey warm day here in the Highlands; and after a long walk in the sunshine, I think a treat's well deserved!

So i bring you my recipe for coconut ice; this stuff can be whipped up in minutes and is gone just as quick! Enjoy! x

Coconut Ice

160ml condesned milk

2 cups icing sugar

2 cups desiccated coconut

2-3 drops red food colouring

Sieve the icing sugar. Add the coconut and condensed milk and milk well.

Divide into two and add red food colouring to one.

Press into a tub or mould and chill.
